A Surprisingly Luscious Leche Flan

Mona sold me one tray of fresh eggs last week. I thought, what would I do with a tray of eggs? Elmer told me to just put some in the fridge and stock the rest in the cupboard. Okay, they won't be staying in there long enough to rot anyway.

But still, I was itching to do something with them. I thought, leche flan! I love leche flan. Like super love. Carl would call it cream caramel. Leche flan, cream caramel. Isu met lang! ^_^

So on Tuesday, after taking a walk around Cudirao with my girls, leche flan it was! I know this is not the first time you'll ever see a recipe for a leche flan. 'La lang. Gusto ko lang i-share nang may ma-blog naman ako. Haha!

Kaya heto na!

Ingredients:
  • 5 eggs yolks
  • Half (or a little more than half) of the small can of condensed milk (See photo below)
  • Half (or a little more than half ) of the big can of evaporated milk (See photo below)
  • 3 tablespoonfuls of sugar

*There's supposed to be 1 teaspoon vanilla extract on the list but it was not available at that time.

Step 1: Mix all first three ingredients on our list above, plus the vanilla extract if available. 

Step 2: Put one tablespoonful of sugar in a llanera and heat llanera on the stove top until the sugar caramelizes.

Step 3: Pour in the mixture in the llaneras. I used three small llaneras for this amount of mixture. 

Step 4: Steam for 30-35 minutes or until the leche flan forms.

Warning: Do not make the same stupid mistake that I did.
Note: Steam can be really, really, really hot!

Step 5: Refrigerate.

What's left of the ingredients: Egg whites, Evaporated milk and condensed milk

With the remaining evaporated milk, I fixed myself a good cup of naicha. And with the egg whites, Elmer stirred in the rest of the evaporated milk and fried it. Ewan ko ba kung healthy pa kainin 'yun. Whatchathink? But I admit, masarap and creamy the fried egg white.

I never intended to make a huge batch because I wasn't sure how this leche flan would turn out. Surprise! The result was three llaneras of really nice and luscious tasting leche flan. Yay!!! My friends complimented me for this. (Karen, hit or miss? HIT!!!) Oh yes! Nanghinayang tuloy ako kung bakit konti lang ginawa ko. Next time I'll make more. 

I realized, andali lang pala gumawa ng leche flan. I can see myself making more na more leche flan in the future. Excited ako! ^_^
